If you deleted your Apple ID using the official site and it’s been more than seven days, there’s no way to get it back. It was in the terms and conditions that you agreed to before deleting it, according to Apple. If you’ve deleted your Apple ID. It’s vanished.

What will happen if my account is canceled? You will be unable to access your iTunes Store, Apple Books, or App Store purchases. Your pictures, films, and documents saved in iCloud will be lost permanently. You won’t receive iMessages, FaceTime calls, or iCloud Mail emails addressed to your account.
